Batman Cake (Oreo Cake)

For my niece's birthday party, I made a chocolate cake with Oreos baked in the batter.  She is currently obsessed with everything Batman so I used the frozen buttercream transfer method to quickly decorate the cake.  My sister helped by using the same method but with melted chocolate to make mini toppers for the cupcakes.

A Giant Cupcake Cake

Thank you for following along with me as I documented my past year in the kitchen.   It amazes me looking back and seeing how much I have accomplished because of the encouragement of friends and family; motivating me to create something that would blow them away.

My personal favorites of this past year was the Nikon cake for my cousin Dennis, the topper cake for a backyard wedding, and the winter wonderland cake for Cake4Kids.

Here's to an even sweeter New Year!

Frozen Buttercream Transfer

frozen buttercream transfer

Cake4Kids held a photography class for its volunteers and I offered to make the cake for the event.  I used the opportunity to practice a new technique and to use my new pastry scraper.  I even piped borders for the first time!

I'm not surprised that the only other all buttercream cake I decorated was a 6-inch lemon chiffon cake I made for Mother's day.  Buttercream cakes scare me more than fondant cakes!  However, aftermaking this particular cake, I am a little less scared.  I love how smooth the pastry scraper got my frosting.  I didn't even have to revert to my go to paper towel method.

So, the new technique I got to practice was making a frozen buttercream transfer.  I love how simple and clean yet fancy the cake looks because of the added touch!

frozen buttercream transfer step 1
First, I traced a picture of my dog Patches that my brother created for me onto a piece of parchment paper and taped it onto my cutting board face down.

Then, I traced over the lines using the Wilton Ready To Use Icing Tube in black with a #2 tip.

Next, I filled in the picture accordingly with my go to vanilla buttercream frosting using an angled spatula.

Then, I created an additional white border around the entire image to help make it pop once on the cake.

Last, I covered the entire image with frosting; pressing down slightly to remove any air pockets.  I froze the image overnight and the next morning, I placed it onto the cake and the parchment paper peeled right off.

Hot Wheels Theme Birthday

race car track cake

I had the pleasure of making this cake for a friend's nephew's Hot Wheels theme birthday last weekend.  As soon as she mentioned the theme to me, I knew I wanted to make a race track.  I decided not to cover the entire cake in fondant and I'm so glad that the paper towel method worked very well with my frosting this time around.

The cake was hand carved from an 8 inch square yellow cake using a template my brother created for me.  I filled, crumb coated, frosted, and decorated with vanilla buttercream frosting.  The only fondant I used were the red and black pieces.  The cars are from a Hot Wheels candle set I picked up from Party City.

Filled, stacked, carved.

Crumb coated.

Frosted.

Smoothed out.

In addition to the race car track cake, I made a dozen oreo cupcakes for the party.  I loved the oreo on the bottom concept from the oreo cheesecakes that I used it with the cupcakes.  The cupcakes were my go to white cake with chopped oreos and the frosting was my go to vanilla buttercream frosting with crushed oreos.

Another Cake for Cake4Kids.org

Cake4kids.or Cake

An emergency cake was requested by Cake4Kids last night to be delivered today.  Created quite the stir as we're usually notified at least one to two weeks in advance.  I happened to be baking a cake for a separate project due this Saturday, and I figured I had enough time to remake the cake, so I quickly voluntered for this last minute request.

Normally, I would have doctored a box cake mix as I find people are more accepted to those flavors but I just took what I already had out cooling on my racks.  The cake was a white cake with chopped oreos, a personal favorite, with vanilla buttercream frosting and a mix of marshmallow and store bought fondant accents.  I should've spent a little bit more time on trying to smooth out the frosting; the impossible to get sharp corners are one of the reasons why I prefer circle cakes over square cakes.  Also, I haven't figured out the best way to get the fondant out of the ABC cutouts.  You can see the marks from pushing them out with a rounded stick.

A Baby Shower Cake and A Birthday Cake

I was crazy enough to agree to making two cakes this week.. especially when both were due on the same day! A bit stressful at times as I had to make 4 batches of cake batter, 3 batches of frosting, and 2 batches of marshmallow fondant but I'm so proud of my accomplishment.  The cakes came out moist and the frostings were yum; however, I was frustrated with my marshmallow fondant.  It was so sticky and thin at times which made it hard with the banners.  Looking into working with gumpaste soon, stay tuned.

Cake 1 of 2 was a baby shower cake for my brother's coworker to match their King of the Jungle party supplies.  The cake flavors were oreo and chocolate with a dark chocolate frosting (adapted from Martha Stewart's Cupcakes).  It was covered in marshmallow fondant and store bought chocolate fondant.

Cake 2 of 2 was a birthday cake for my boyfriend's niece who requested a princess theme.  The cake was white cake (adapted from Cake Central) with strawberry frosting.  It was also covered in marshmallow fondant.  Many thanks to my sister and her boyfriend who helped with decorating.

C is for Cookies.. and Cupcakes

Because I couldn't decide between the cookies and cream cupcakes and the snickerdoodle cupcakes, I decided to make both!

My sister's coworkers got to sample the snickerdoodle cupcakes (from Martha Stewart) which we both agreed tasted exactly like the cookie.  I stayed true to the recipe and stuck with the 7-minute frosting.  Nerve wrecking as I never worked with a cooked frosting before and I was unsure whether it would make it the next day.

My brother's coworkers got to sample the oreo cupcakes which was basically a white cake with chopped Oreo cookies (adapted from Cake Central) .  I frosted these two different ways as I so scared about the oreo whipped cream frosting (adapted from Annie's Eats) not being able to hold up.  The second frosting was an oreo buttercream frosting (adapted from All Recipes) which paled in comparison.  I loved the whipped cream frosting.  Taste like a scoop of ice cream.  I should've stuck to the whipped cream frosting as all the cupcakes were kept covered in the fridge overnight anyway.

The pile of dishes I had to wash every time I started a new recipe.  A pain to start and stop each time.  I need more mixing bowls for my Kitchenaid.

Poor Patches felt neglected.
