Funfetti Cake



Funfetti cake (white cake with sprinkles) for my sister's birthday. 

Funfetti Cake
adapted from King Arthur Flour
Makes 1 2 layer 8 inch cake

Ingredients
2 3/4 cups cake flour
1 2/3 cups sugar
1 Tablespoon baking powder
3/4 teaspoon salt
3/4 cup (12 tablespoons) unsalted butter, softened
4 large eggs whites plus 1 whole large egg
1 cup full-fat vanilla yogurt or 1 cup whole milk
2 teaspoons vanilla extract
1 teaspoon almond extract
1/4 cup to 1/2 cup of rainbow jimmies (sprinkles)

Directions
Preheat oven to 350F. Prepare 2 8-inch round cake pans by lining them with parchment paper and greasing the paper.

Mix all of the dry ingredients together in a large mixing bowl. Add the softened butter, 1 tablespoon at a time. Once butter is all incorporated, add the eggs, one at a time. Scrape down the bowl after the addition of each egg.

In a 2 cup measuring cup, stir together all the wet ingredients. Add the mixture in, 1/3 at a time, to the batter; scraping down the bowl after each addition.

Stir in the sprinkles by hand until fully incorporated. Do not over stir as this will cause excessive color bleeding into the batter.

Poor batter into the prepared pans. Scatter a few more sprinkles on the surface. Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.

Remove cake from pans and let cool completely on the racks. Frost as desired.

Funfetti Oreo Surprise Cupcakes


Cakes with sprinkles scream "I'm having a party" to me; so, I decided to surprise a coworker with some funfetti cupcakes for her birthday this past week.


I started out making a standard yellow cake and simply adding every colored sprinkle I owned to the batter.  Unfortunately, I forgot to save some of the sprinkles for the frosting; which was vanilla bean buttercream with an entire block of cream cheese added to it.  Next time, I would only add half of the block of cream cheese as it no longer tasted like a buttercream frosting but more of a cream cheese frosting to me.   Because I can't imagine anyone objecting to Oreos, I added them to the bottom of the cupcakes for a surprise twist.  This is just something I have done here and here with get results.

SJ Sharks Cake


My brother happened to be attending a birthday party the same day I was doing a demo on how to cover a cake with fondant for the Cake4Kids' volunteers; so, I offered to decorate the cake for him to take with him.

The birthday girl is a huge SJ Sharks fan, so I went with a simple and clean design focusing on the logo.

The funfetti cake (doctored cake mix) with vanilla buttercream frosting was covered with marshmallow fondant and a braid border was added.  The braid was made by twisting two ropes, made with the clay tool, together.

It took me quite awhile to figure out how I would cut and layer the fondant pieces to actually get the SJ Sharks logo to pop.  I'm glad I eventually figured it out.

Lego Cake (Cake4Kids.org)

Last weekend, I had the opportunity to make another Cake4Kids cake for a boy who likes Legos!  I had a lot of fun with this one.  I doctored a box of Funfetti cake mix from an adapted version of a Cake Central recipe.  I substituted the almond extract for vanilla extract.  Cake was iced in vanilla buttercream frosting using the Viva Towel Method.  Decorations were put together using marshmallow fondant and tylo glue.  At first, I tried making a bunch of little dots for the Lego blocks but then I realized using tip #4 and poking holes worked 10x faster!
